Bonus Recipe Thursday!
Garlicky Sunchoke & Spaghetti
1 lb. Spaghetti
1/2 lb. Sunchokes aka Jerusalem artichokes, thinly sliced, steamed for 10 minutes
1/4 cup olive oil
1/2 cup vegetable broth
1 bulb of garlic, thinly sliced
1/4 tsp. cayenne pepper
1/2 cup chopped fresh parsley
Salt and pepper
Sauté the steamed Sunchokes with olive oil and a bit of salt until slightly browned. Add in broth, cayenne and garlic. When pasta is ready, add it to the frying pan along with the parsley and salt and pepper to taste.
