ISRAELI COUSCOUS & KALE SALAD
Makes 6 servings
8 oz Israeli couscous
Extra virgin olive oil
2 small zucchini
4 cloves fresh garlic
4-5 stalks green onion
8 oz tofu (firm)
Salt and pepper
5-6 oz fresh kale
Handful of almonds
Make the couscous according to package and set aside.
Drizzle small amount (1 tbsp max) EVOO in pan, add diced zucchini, garlic, green onion, tofu, salt and pepper and mix all together until coated evenly, then heat pan to medium-high and cook until browned.
Add mixture to couscous and mix.
Drizzle small amt EVOO in pan, add kale and chicken stock to medium heat. Cover for 5 minutes. Then take cover off and let liquid cook off.
Once cooked off, mix couscous mixture with kale and throw in almonds and mix all together. Voila!
