Here's a yummy, energizing breakfast to try this week: my Protein Pancake (made with egg whites & whole grain oats). Unlike standard flapjacks, which are pure carb and usually made with junky white flour, this pancake provides a whopping 20 grams protein from the egg whites. Plus, it makes a HUGE, filling cake for just 265 cals. This one is topped with blueberries and mango chunks (both were frozen & heated in microwave)--but you can top it with any fruit you like, along with optional nuts or seeds.
