Stopped my Dominique Ansel Bakery on my way to JG to see my homeboy Dominique. The bakery is awesome. The Kouign Amann is one of my favorite things ever- When i worked at La Duree I made and ate them daily. His Canelle are incredible too. Here are some pics of the shop.

Thanksgiving eclair. Cranberry cream, rose water glaze, crystallized almonds and pistachios, dried cranberries.
Had to enlist my pops to help me get the eclair prep done today! He needs some practice with the pastry bag.

Once dough is chilled,flip it out, shape it to a rectangle roll it out (L), fold it onto itself (M), roll again (R) chill #SugarRushCookbook
I like to freeze and grate the butter and bring the biscuit dough together by hand carefully without overworking. Then chill b4 next step
