#Champagne #Glossary Remuage (Riddling): The process to remove the sediment that settles in the bottlenecks. The practice of remuage, or riddling, involves turning filled, aging Champagne bottles on racks to sift the yeast sediment into the bottle neck. Most houses do this on mechanized racks and nearly all eject the remaining yeast by freezing the bottle necks. We do neither: all bottles are turned by hand, and the yeast is manually removed.
