August 16, 2012Here's a quick & easy seafood dinner recipe created by our intern, Amy!
Pat 8 scallops dry and season with ¼ tsp kosher salt and ¼ tsp pepper. Sear in a skillet with 1 tbsp of olive oil for 2-3 min on one side over medium-high heat; remove. In the same pan, sauté 1/2 thinly sliced red onion, 1 thinly sliced fennel bulb and 1 sliced red bell pepper over medium heat, about 10 min. Add ½ cup white wine and 6 oz.clam juice; simmer until slightly thickened, about 5 min. Add scallops back into pan for 2 min or until just cooked through. Top with fresh basil and enjoy! Makes 2 servings.
