July 9, 2012Next up is Kimberly's "California Roll Wrap" -- so cool! She spreads a low-carb multigrain tortilla with her homemade wasabi cream cheese (see instructions below), then layers on shredded carrot, sliced cucumber, imitation crab, and avocado. Tightly roll wrap and slice into pieces--just like sushi. A delicious, unique lunch for just 250 calories!

Wasabi cream cheese: Soften 2 teaspoons light cream cheese in the microwave (5 seconds or so) and mix with 1 teaspoon light mayonnaise and a pea-sized squirt of wasabi paste (from tube).
