May 16, 2012I absolutely love grilled vegetables -- it's such an easy, flavorful way to prep produce. Slice up a variety of colorful veggies (eggplant, zucchini, bell peppers, onions, portobello mushroom caps), mist them with oil spray, and season with a little kosher salt, pepper, and any other desired seasonings. Cook for 3-5 minutes on each side, or until tender and marked by the grill. What are your favorite healthy meals to make on the grill?
