May 16, 2012Just whipped together this impromptu dinner and it's an instant favorite! Will definitely become a staple. I sprayed a large skillet with oil spray and added one can rinsed/drained black beans (preferably no-salt-added or low-sodium) and 1/2 tsp garlic powder. Sauté for 2 mins over medium heat, then add a jar of mild (or medium) salsa, 1 tsp Dijon mustard and 1/2 tsp ground cumin. Simmer for 10 mins. Makes 3 servings: 180 cals, 8g protein, 1g fat (0g saturated), 360 mg sodium, 31g carbs, 8g fiber
