March 12, 2012Whipped up this simple "Curried Chicken Salad" for lunch today. I mashed together 1 pouch cooked chicken breast (about 5 ounces) with 1 Tbsp light mayo, 1 tsp curry powder, and plenty of minced onion and chopped red bell pepper. As an added health bonus, the curry powder contains turmeric, a potent anti-inflammatory spice. [Nutrition stats: 230 cals, 5g fat (0g saturated), 6g carbs, 1g fiber, 2g sugar, 44g protein]
