February 29, 2012You have to try this Ricotta-Mushroom Pita Pizza! In a small saute pan, saute 1 cup sliced mushrooms in oil spray with a pinch of garlic powder and kosher salt and black pepper to taste (medium heat, until soft). Then, spread a full-size, whole-grain pita bread with 3 tbsp part-skim ricotta cheese, top with the sauteed mushrooms, and sprinkle with crushed red pepper flakes if desired. Bake the pizza in 425 degree oven (on a baking sheet lined with foil) for about 8 mins. Healthy comfort food! 1 pizza = 225 cals, 5g fat (2.5g saturated), 38g carbs, 7g fiber, 16g protein, 425mg sodium
