February 20, 2012To roast fresh beets, trim off the tops & bottoms (you can save the leafy beet greens to saute for a side dish). Scrub the beets well, then set each beet on a large square of aluminum foil (1 beet per sheet). Lightly drizzle the beets with olive oil & sprinkle with kosher salt & pepper. Rub the oil over the beets, then wrap each beet tightly in the aluminum foil. Roast at 400 deg for 1-2 hours, depending on the size (until a paring knife slides in & out of the beets easily through the foil).
