- 16 May 2012 I absolutely love grilled vegetables -- it's such an easy, flavorful way to prep produce. Slice up a variety of colorful veggies (eggplant, zucchini, bell peppers, onions, portobello mushroom caps), mist them with oil spray, and season with a little kosher salt, pepper, and any other desired seasonings. Cook for 3-5 minutes on each side, or until tender and marked by the grill. What are your favorite healthy meals to make on the grill?
- 16 May 2012 Just whipped together this impromptu dinner and it's an instant favorite! Will definitely become a staple. I sprayed a large skillet with oil spray and added one can rinsed/drained black beans (preferably no-salt-added or low-sodium) and 1/2 tsp garlic powder. Sauté for 2 mins over medium heat, then add a jar of mild (or medium) salsa, 1 tsp Dijon mustard and 1/2 tsp ground cumin. Simmer for 10 mins. Makes 3 servings: 180 cals, 8g protein, 1g fat (0g saturated), 360 mg sodium, 31g carbs, 8g fiber

She sliced jicama (slightly sweet, crunchy root vegetable) into strips, squeezed fresh lime juice on top, garnished with chopped cilantro and sprinkled with sesame seeds. Have you ever tried jicama?

- 11 February 2012 Peanut Butter Spaghetti Ingredients 1 box whole wheat spaghetti (or gluten-free whole grain) 2 teaspoon sesame oil 3 tablespoon natural peanut butter 1/4 cup reduced-sodium vegetable or chicken broth 1/4 cup(s) soy sauce, reduced-sodium 1 tablespoon sugar 1 tablespoon rice wine vinegar *1/2 teaspoon optional hot sauce *1/2 cup optional sliced scallions salt and black pepper, to taste Preparation Cook the whole wheat spaghetti according to package directions, until al dente. Drain the spaghetti, and toss with the sesame oil. In a small bowl, stir together peanut butter, broth, soy sauce, sugar, and rice wine vinegar (add optional hot sauce, if you choose). Stir until smooth. Toss the noodles with the sauce — make sure to thoroughly soak up all the sauce on the bottom of the bowl. Season with a pinch of salt and pepper to taste. Spoon into a serving bowl and top with optional scallions. Serve hot, cold, or at room temperature.
