Light and satisfying, this one-pot meal makes a perfect weeknight dinner.

When she isn’t solving crimes as Detective Jane Rizzoli on "Rizzoli & Isles," actress Angie Harmon likes to spend her downtime experimenting in the kitchen. It sure looks like she know what’s she’s doing—her fresh and colorful Fish Provençal looks downright restaurant worthy.

This simple one-pot meal, with its layers of fresh veggies and flaky white fish, is a fast and healthy way to get dinner on the table. Try it in your own kitchen with this recipe:

Fish Provençal
(recipe adapted from Martha Stewart)


Zest of one lemon
1 tsp. dried Italian seasoning
1/4 tsp. red-pepper flakes
Coarse salt and ground pepper
1 small sweet onion, thinly sliced
2 garlic cloves, minced
6 small zucchini, thinly sliced
4 haddock, cod, or striped bass fillets (6 ounces each)
1 large tomato, seeded and chopped
Extra-virgin olive oil


Preheat oven to 400˚F. Pat fish dry and season with salt and pepper. Mix lemon zest, Italian seasoning, and red pepper flakes together. Set spice mixture aside.

Heat a small amount (about 1 tablespoon) of olive oil in an oven-safe Dutch oven, over medium heat. Add onions and cook until softened and golden-brown, about 10-12 minutes. Add garlic and cook an additional 3 minutes. Remove from heat.

Layer half of the zucchini, tomatoes, and spice mixture over the onions and garlic. Drizzle with olive oil and season with salt and pepper. Add fish fillets and the remaining zucchini, tomatoes, and spice mixture. Drizzle with olive oil and season with more salt and pepper.

Bake with lid on for 10 minutes. Remove lid and bake, uncovered, for an additional 15 minutes. Serve as is, or with crusty bread for dipping.
